Chargrilled Pork Chops + Kentish Apple Slaw

A true taste of Kent, this dish pairs smoky chargrilled pork chops with a crisp, refreshing apple slaw. Our pork comes from pigs ethically reared on the Spratsbourne Estate, where they live and roam freely. The rich, flavourful meat is perfect for the barbecue, balanced by the brightness of Kentish apples, fennel, and cabbage. A simple family meal.

Ingredients (Serves 4):

  • 4 thick-cut pork chops
  • Kentish apples
  • Fresh fennel
  • radishes
  • Summer cabbage
  • Honey mustard dressing
  • Fresh herbs
  • Sweetcorn

Method:

  1. Season chops with herbs and olive oil.
  2. Grill on the barbecue for 6-7 minutes each side.
  3. Grill sweetcorn.
  4. Mix julienned apple, fennel, and cabbage for the slaw.
  5. Rest meat for at least 5 minutes.
  6. Serve with slaw and grilled corn.
