Block is our farm-led butchery, rooted in the land we farm and the animals we raise. It exists to offer carefully sourced meat with complete transparency, from pasture to counter.

We work at a human scale, prioritising quality, seasonality and respect over volume. Every cut reflects the place it comes from and the people who handle it.

Our Approach

We butcher whole animals, slowly and thoughtfully, using traditional methods and modern understanding. This allows us to minimise waste, honour the animal, and offer a broader range of cuts beyond the familiar.

Our approach is practical and honest. We work with what the season gives us, letting availability shape the counter rather than forcing consistency year-round.

Our Animals

Much of what we sell comes directly from the Spratsbourne Estate, where animals are pasture-raised with space, time and care. Their diets, welfare and environment are central to the quality of the meat.

When we source beyond the estate, we work only with trusted local farms who share our values around animal welfare, land stewardship and sustainability.

The Butcher's Role

Good butchery is about skill, restraint and understanding. Our team prepares each animal with care, ensuring every cut is treated with the same attention, whether it’s a prime joint or a lesser-known piece.

We’re always happy to advise on cuts, quantities and cooking, helping customers make the most of what they buy and encouraging confidence beyond the obvious choices.

Our Counter

Our counter reflects the whole animal. Fresh cuts sit alongside slow-grown joints, offal, bones and seasonal specials, changing as animals and supply change.

Alongside fresh meat, we offer curated boxes and small-batch items that extend the life of the animal and make good use of the full carcass.
