This recipe brings together rich, slow-roasted pork belly with a crisp and tangy red cabbage slaw. The pork is rubbed with Epic Dust Bros seasoning for bold, smoky flavour and roasted until meltingly tender with caramelised edges. The slaw adds freshness and crunch, making it a perfect pairing for a relaxed weekend meal. Serve in a bun or alongside your favourite sides.
Red Cabbage Slaw Ingredients
- 1 small red cabbage, finely shredded
- 2 carrots, grated
- 1 red onion, thinly sliced
- 2 tablespoons apple cider vinegar
- 1 tablespoon mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon honey
- Salt and pepper to taste
Slaw Instructions
- In a large bowl, combine shredded cabbage, carrots, and red onion
- In a separate bowl, whisk together vinegar, mayonnaise, mustard, and honey
- Pour dressing over vegetables and toss well to combine
- Season with salt and pepper to taste
- Refrigerate for at least 30 minutes before serving to allow flavours to meld

Pork Belly Ingredients
- 2 lbs pork belly block, skin removed
- 3-4 tablespoons Epic Dust Bros seasoning
- 2 tablespoons olive oil
Pork Belly Instructions
- Pat the pork belly dry with paper towels
- Score the fat cap in a diamond pattern
- Rub oil all over the pork belly
- Generously coat all sides with Epic Dust Bros seasoning
- Let rest at room temperature for 30 minutes
- Preheat oven to 150c
- Place pork belly fat side up in a roasting pan
- Cook for 2.5-3 hours until internal temperature reaches 90c
- Increase heat to 230°C for the final 15-20 minutes to crisp up the fat
- Rest for 15-20 minutes before slicing
Notes
- For extra tenderness, refrigerate seasoned pork belly overnight before cooking
- Internal temperature is key - the meat should be probe tender when done
- Slice against the grain for the best texture
